Sheet Pan Mania-Parmesan Tilapia

I don’t know what took me so long to get on this sheet pan wave that has hit the nation.  I had heard of sheet pan recipes, but had never tried one until today.  This is an easy recipe that doesn’t really require any measurements.

Ingredients

Fresh or frozen tilapia filets, thawed

Parmesan Cheese

1-2 medium zucchini

Pint grape tomatoes

Lemon-Pepper seasoning

Garlic powder

Spray butter

Olive oil

Instructions

Preheat oven to broil.

Place tilapia on a large, rimmed baking sheet that has been drizzled with olive oil.

Cut zucchini into ¼ inch thick slices and add to baking sheet.

Top fish with lemon-pepper and garlic powder.  Spray the tops with spray butter.

Broil for 5 minutes.

Remove fish from broiler.

Cut grape tomatoes in halves and add to baking sheet.

Flip the fish over, sprinkle with Parmesan cheese, and return to the broiler for 5-6 minutes more.  The fish will flake easily with a fork when done.

Remove from broiler and serve hot.

This recipe took me 15 minutes to get from refrigerator to dinner table.  I think I just found another category of Dish-And-Dash meals!!  Has anyone ever tried sheet pan recipes?  Leave me a comment and tell me which is your favorite!
